Cellar 3

It seems like almost every weekend a new brewery opens in San Diego. This past weekend was the grand opening of Green Flash Brewing’s new Cellar 3 in Poway, and we dropped by to check it out.

Green Flash’s motto is “Dedicated To The Craft”, and with Cellar 3 they are adding a very artistic touch to the high quality ales coming out of their Mira Mesa production facility. When they filled the two existing cellars at their main brewery, they decided to make a dedicated barrel aging headquarters to keep the funky and wild barrels in their own playroom.

From the minute you walk in the door, you can see that art is a big part of what Cellar 3 is about. Really cool paintings adorn the walls of the tasting room, and above the main bar is a very eye-catching art-deco styled metal installation that evokes the Green Flash sun logo. They had several series of beers on tap for the grand opening, and had numerous variations of each. These included:

Natura Morta – Fruit re-fermented Belgian Saison, aged in red wine barrels with Brettanomyces

Le Freak Barrique – Belgian Trippel and Imperial IPA hybrid with Brettanomyces

Sauvage – Various barrel aged ales with Brettanomyces

Divine – Belgian style Trippel

Flanders Drive – Their flagship sour ale.

Oh yeah, the deeply delicious Silva Stout too. That’s the Green Flash Double Stout aged in oak bourbon barrels. Complex and velvety.

Head on out to Poway, Cellar 3 is well worth the drive! And if you’re brewery hopping don’t forget Lightning Brewery just expanded their tasting room too!
